Candice May McLain
I grew up as a free range farm kid, free to experiment and create. As a kid I had my own garden and orchard. I even had my own goats and made goat cheese before it was cool. I am happiest in the kitchen and have a big heart to serve others.
As a private chef, I work hard to create unique and beautiful meals for you and your family. Whether it’s a dinner with old friends, a rehearsal dinner, or a business lunch, I put forth extraordinary effort and energy to make sure it is wonderfully memorable and delicious.
The Canvas
The creativity is yours, mine and ours. Provide me with a vision and I will help formulate it. Perhaps allow me to improvise and I will pleasantly surprise you.
The Process
The source is everything. To say my ingredients are local and fresh is beyond cliché. The route to a fine meal begins with selecting each element caringly and then preparing it in a manner sympathetic to your needs. Vegetables and fruits are gathered in their seasonal prime. Meats, fish and other protein are carefully readied to optimize flavor and nutrition. I blend every soup and every sauce with a mixture of experience, expertise, nuance, and imagination. Complementarity is a key element, whether that is in balancing courses or enhancing the palette with the choice of wine.
The Presentation
Sur le table is part of the experience. A good supper transcends mere nourishment. It is greater than a fine occasion of social interaction. It is all this and more. A Rainforest Chef afternoon or evening is a good supper.
The Glow
Quality of the materials, of the preparation and the experience is paramount. There is a very broad framework for the canvas on which this can be created. To best achieve these goals our gatherings range from two to twenty people. I can use your space or a neutral site.
The end of the meal will be radiant, knowing that I have helped you share in a level of originality perhaps not experienced in a decade or so.
The Relationship
You are the audience. You are also a participant. The contents and the pace of a meal can be decided by the artist—me, or as part of a collaborative effort if that is where the journey takes us.
